Just one of those days…

Do you know these days when you just don’t want to go outside, don’t want to leave your bed, your warm appartment, the safety of your home?

Today is one of these days… It’s raining and grey outside and I’m inexplicably tired. So, when my appointment for today was cancelled, I decided to stay home, although I have a million things to do and a million errands to run. But today the world can wait. I just curl up on the couch, read a book, drink some of my favourite chai latte and …. – bake a cake. This was the only active thing I was keen on doing. It just felt like the perfect time to make sweet old-fashioned poppyseed cake with streusels on top. Hmmmmm, yummy! 🙂

The recipe is pretty simple.

For the dough just knead together:

200 grams – flour

80 grams – sugar

2 teaspoons – baking powder

4 tablespoons – milk

4 tablespoons – oil

125 grams – sour cream

Preaheat oven to 200° Celsius. Knead until dough has a moist but not sticky texture. If it’s sticky, add some more flour. Spread evenly in a baking pan.

Spread ready-to-use poppyseed mix on top of the dough.

For the streusels:

150 grams – flour

90 grams – sugar

90 grams – butter (straight out of the fridge)

Mix flour and sugar. Then add little pieces of butter and knead until all is mixed well together and you have a crumbly kind of dough. Crumble on top of poppyseed mix.

Pop the whole thing in the oven and bake for 20-25 minutes. Enjoy!
